Potato fry

Ingredients :

  • 2 cups - Boiled and roughly smashed potatoes

  • 1 Tsp - Crushed ginger & garlic

  • 1 no - Chopped onion

  • 1-2 - Finely chopped Green Chili (optional)

  • 1 Tbsp - Cashews (optional)

  • 1 Tbsp - Chopped coriander leaves

  • 1-2 Tbsp - Oil

  • As needed - Salt

Spices

  • 1 Tsp - Mustard seeds

  • 1 Tsp - Cumin seeds

  • 1 Tsp - Sambar powder

  • 1 Tsp - Black pepper powder

  • 1 Tsp - Paprika / cayenne pepper powder(for spicier option)

  • 1 Tsp - Turmeric powder

  • 1 Tsp - Mustard seeds

  • 5-6 - Curry leaves (dry or fresh)

Preparation

  1. Heat the pan on medium high and add oil.

  2. Add mustard seeds, cumin, and cashews, allowing the mustard seeds to splutter.

  3. Stir in the chopped onion, green chili, curry leaves. Sauté for a couple of minutes until fragrant.

  4. Reduce the flame to medium and add in the ginger & garlic paste , cook until the raw pungent disappears it will take a few minutes.

  5. Add in the paprika, turmeric and sambar powder and saute` for just few seconds

  6. Add about a tablespoon of water and throw in the potatoes and mix it well .

  7. Close the lid and cook on a medium flame for 5 minutes

  8. Finish with a sprinkle of coriander and freshly ground pepper before serving.

  9. Serve it Dhal rice or Roti
